Ingredients:

  • For the Chicken Marinade:
  • 2 Chicken Breasts, halved
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper to taste
  • For the Tomatoes:
  • Cherry Tomatoes, halved or quartered
  • 1 tablespoon Olive Oil
  • Fresh Basil Leaves, chopped
  • Salt and Pepper to taste
  • For the Topping:
  • Basil Pesto
  • Mozzarella Slices
  • Instructions:
  • Chicken Marinade:
  • In a small bowl, combine olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Flatten the thicker part of the chicken breasts using a meat mallet.
  • Brush the chicken breasts with the marinade.
  • Tomatoes:
  • Toss the cherry tomatoes in olive oil, chopped basil, and season with salt and pepper.
  • Cooking:
  • Heat 2 tablespoons of butter in a pan.
  • Brown the chicken from both sides, but don’t cook it through, as it will continue to cook in the oven.
  • Transfer the browned chicken to a baking dish coated with cooking spray.
  • Top each chicken breast with mozzarella slices.
  • Bake in the oven at 200°C/400°F for about 20 minutes or until the chicken is cooked through. The baking time may vary depending on the thickness of your chicken breasts.
  • Assembling:
  • Remove from the oven.
  • Top each chicken breast with about 3 tablespoons of pesto, a scoop of the seasoned tomatoes, and some freshly cracked pepper.
  • Serving:
  • Serve immediately and enjoy!
