☆Ingredients:

2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
Salt and pepper to taste
Olive oil for cooking
4 large bell peppers (any color)
1 pound ground beef
1 cup cooked rice
1 cup shredded cheese (cheddar or your preference)
1 onion, finely chopped
1 can (14 oz) diced tomatoes, drained

☆Instructions:

Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers, remove seeds, and blanch them in boiling water for 3-5 minutes. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Sauté chopped onions and garlic until softened.
Add ground beef and cook until browned. Drain excess fat if needed.
Stir in diced tomatoes, cooked rice, oregano, cumin, salt, and pepper. Cook for an additional 5 minutes.
Place the blanched peppers in a baking dish. Stuff each pepper with the beef and rice mixture.
Top each stuffed pepper with shredded cheese.
Bake in the preheated oven for 25-30 minutes or until the peppers are tender, and the cheese is melted and bubbly.
Remove from the oven and let it cool slightly before serving.
