1/2 cup granulated sugar
2 cups whole milk
1 teaspoon vanilla extract
Ground nutmeg, for garnish
4 large eggs

Preheat Oven: Preheat your oven to 350°F (175°C). Place 4 ramekins or custard cups in a baking dish large enough to accommodate them without touching each other.

Mix Eggs and Sugar: In a mixing bowl, whisk together the eggs and sugar until well combined and slightly frothy.

Heat Milk: Heat the milk in a saucepan over medium heat until it just starts to simmer. Remove from heat and stir in the vanilla extract.

Combine Ingredients: Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.

Strain Mixture: Strain the mixture through a fine-mesh sieve into a pouring jug to remove any lumps or bubbles.

Fill Ramekins: Pour the custard mixture evenly into the ramekins. Sprinkle a little ground nutmeg over the top of each custard.

Create Water Bath: Carefully pour hot water into the baking dish around the ramekins, creating a water bath that reaches about halfway up the sides of the ramekins.

Bake: Transfer the baking dish to the preheated oven and bake for 30-35 minutes, or until the custards are just set but still slightly jiggly in the center.

Cool and Serve: Remove the custards from the oven and let them cool in the water bath for a few minutes before carefully removing them. Serve warm or chilled, as desired.
