Classic Vegetable Frittata

☆Ingredients:

1 small onion, diced
1 bell pepper, diced
1 cup chopped vegetables of your choice (such as spinach, mushrooms, zucchini, etc.)
1/2 cup shredded cheese (such as cheddar, mozzarella, or feta)
6 large eggs
1/4 cup milk or cream
Salt and pepper to taste
1 tablespoon olive oil

☆Instructions:

Preheat and Prep: Preheat your oven to 350°F (175°C). In a bowl, whisk together eggs, milk or cream, salt, and pepper until well combined. Set aside.

Sauté Vegetables: Heat olive oil in a large oven-safe skillet over medium heat. Add diced onion and bell pepper, and cook until softened, about 5 minutes. Add chopped vegetables and cook for an additional 2-3 minutes until slightly tender.

Combine and Season: Pour the egg mixture evenly over the vegetables in the skillet. Sprinkle shredded cheese on top.

Cook on Stovetop: Cook the frittata on the stovetop for 2-3 minutes until the edges start to set.

Bake: Transfer the skillet to the preheated oven and bake for 10-15 minutes or until the frittata is set in the middle and the top is lightly golden.

Serve: Remove from the oven and let it cool for a few minutes before slicing and serving.
