Mexican Tater Tot Casserole

☆Ingredients:

1 cup corn kernels (fresh, frozen, or canned)
1 can (10 ounces) diced tomatoes with green chilies, undrained
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
2 cups shredded Mexican blend cheese
1 bag (32 ounces) frozen tater tots
Optional toppings: chopped fresh cilantro, diced avocado, sour cream, salsa
1 pound ground beef (or ground turkey)
1 small onion, finely chopped
1 bell pepper, diced
1 can (15 ounces) black beans, drained and rinsed

☆Instructions:

Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain excess fat.
Add chopped onion and diced bell pepper to the skillet with the cooked meat. Cook for 3-4 minutes until vegetables are softened.
Stir in black beans, corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes, stirring occasionally.
Spread the meat and vegetable mixture evenly into the prepared baking dish.
Sprinkle 1 cup of shredded cheese over the mixture.
Arrange frozen tater tots in a single layer over the cheese.
Bake in the preheated oven for 30-35 minutes until tater tots are golden brown and crispy.
Remove from oven and sprinkle remaining shredded cheese over the top of the casserole. Return to the oven and bake for an additional 5 minutes until cheese is melted and bubbly.
