Broccoli and Cheddar Twice Baked Potatoes

☆Ingredients:

1 cup shredded cheddar cheese
1/2 cup sour cream
2 tablespoons butter
Salt and pepper to taste
Optional toppings: chopped green onions, crispy bacon bits

☆Instructions:

Preheat the oven to 400°F (200°C).
Scrub the potatoes clean and pierce them several times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
While the potatoes are baking, steam the chopped broccoli until tender, about 5-7 minutes. Drain and set aside.
Once the potatoes are cool enough to handle, cut them in half lengthwise and carefully scoop out the flesh, leaving a thin shell intact. Place the potato flesh in a large mixing bowl.
Mash the potato flesh with a fork or potato masher. Add in the steamed broccoli, shredded cheddar cheese, sour cream, butter, salt, and pepper. Mix until well combined.
Spoon the mixture back into the potato shells, mounding it slightly.
Place the filled potato halves on a baking sheet lined with parchment paper. Sprinkle additional shredded cheddar cheese on top, if desired.
Bake the stuffed potatoes for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let them cool for a few minutes before serving. Garnish with chopped green onions and crispy bacon bits, if using.
