Creamy Baked Potato Casserole

☆Ingredients:

2 tablespoons all-purpose flour
2 cups milk
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
4 large potatoes, peeled and thinly sliced
1 onion, thinly sliced
2 cloves garlic, minced
1/4 teaspoon nutmeg
1 cup shredded cheddar cheese
Fresh parsley, chopped (for garnish)

☆Instructions:

Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
In a large skillet, melt the butter over medium heat. Add the sliced onions and minced garlic, cooking until softened and fragrant, about 5 minutes.
Sprinkle the flour over the onions and garlic, stirring constantly for 1-2 minutes to cook the flour and create a roux.
Gradually pour in the milk and heavy cream, whisking constantly to prevent lumps from forming. Cook until the sauce thickens, about 5-7 minutes.
Season the sauce with salt, black pepper, paprika, and nutmeg. Stir in half of the shredded cheddar cheese until melted and well combined. Remove from heat.
Arrange half of the sliced potatoes in the prepared baking dish, overlapping slightly. Pour half of the creamy sauce over the potatoes, ensuring they are evenly coated.
Repeat the layers with the remaining potatoes and sauce.
Sprinkle the remaining shredded cheddar cheese over the top layer of potatoes.
Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
