☆Ingredients:

1 cup whole milk
1 cup ricotta cheese
4 large eggs
Zest of 1 lemon
Zest of 1 orange
1/2 teaspoon vanilla extract
1 cup semolina flour
1 cup granulated sugar
1/4 cup unsalted butter, melted
Confectioners’ sugar for dusting

☆Instructions:

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.
In a mixing bowl, combine semolina flour and granulated sugar.
In another bowl, whisk together whole milk, ricotta cheese, eggs, lemon zest, orange zest, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
Stir in the melted butter until fully incorporated into the batter.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake in the preheated oven for 40-45 minutes or until the cake is set and golden brown on top.
Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once cooled, dust the top of the cake with confectioners’ sugar.
