Creamy Baked Potato Casserole

☆Ingredients:

4 tablespoons (56g) unsalted butter, diced
2 cloves garlic, minced
2 pounds (about 900g) potatoes, peeled and thinly sliced
2 cups (475ml) heavy cream
1 cup (240ml) whole milk
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 cup (50g) grated Parmesan cheese
1 cup (100g) shredded cheddar cheese (optional)
Fresh thyme sprigs for garnish (optional)

☆Instructions:

Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
In a saucepan, combine the heavy cream, milk, minced garlic, salt, pepper, and dried thyme. Heat over medium heat until just simmering, then remove from heat.
Arrange a layer of sliced potatoes in the prepared baking dish, slightly overlapping each other.
Pour a portion of the cream mixture over the potatoes, ensuring they are well coated.
Repeat layering potatoes and cream mixture until all potatoes and cream are used, ending with a layer of cream on top.
Sprinkle grated Parmesan cheese evenly over the top layer. If desired, sprinkle shredded cheddar cheese on top for extra richness.
Dot the diced butter over the top of the casserole.
Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
Remove the foil and continue baking for an additional 20-25 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
