Grilled Cabbage Wraps with Herb-Marinated Tofu

☆Ingredients:

2 tablespoons olive oil
2 cloves garlic, minced
1 medium-sized green cabbage
1 block of firm tofu, pressed and sliced into strips
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Your choice of fillings (grilled vegetables, avocado slices, shredded carrots, etc.)
Optional: balsamic glaze or sauce of your choice for serving

☆Instructions:

Preheat your grill to medium-high heat.
Cut the cabbage into thick slices, about 1 inch thick, to create sturdy wraps. Brush both sides of the cabbage slices with olive oil.
In a small bowl, mix together minced garlic, thyme, rosemary, salt, and pepper. Rub this mixture onto the tofu slices, ensuring they’re well coated.
Place the tofu slices on the grill and cook for about 4-5 minutes on each side, or until grill marks appear and tofu is heated through.
While the tofu is grilling, place the cabbage slices on the grill. Grill each side for about 3-4 minutes, or until they start to soften and char slightly. Remove from the grill and set aside.
Assemble your wraps by placing a tofu slice and your choice of fillings onto each cabbage leaf. Roll the cabbage leaf around the filling, tucking in the sides as you go.
