☆Ingredients:

2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 cup packed light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups old-fashioned rolled oats
1 cup semisweet chocolate chips
1 cup chopped pecans or walnuts
1/2 cup shredded coconut (optional)

☆Instructions:

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
Beat in the eggs, one at a time, then add the vanilla extract and mix well.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the rolled oats, chocolate chips, nuts, and shredded coconut (if using) until evenly distributed.
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them apart.
Bake for 10-12 minutes, or until the edges are golden brown.
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
