Tex-Mex Stuffed Pasta Shells

1 packet taco seasoning
1 can (14 ounces) black beans, drained and rinsed
1 cup frozen corn, thawed
1 pound ground beef
1 cup salsa
1 cup shredded Mexican cheese blend
20 jumbo pasta shells, cooked according to package instructions
Optional toppings: sour cream, guacamole, chopped cilantro

☆Instructions:

Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add the taco seasoning to the cooked beef, following the instructions on the packet. Stir in the black beans and corn, and cook for an additional 2-3 minutes.
In a mixing bowl, combine the beef mixture with ½ cup of salsa and ½ cup of shredded cheese.
Stuff each cooked pasta shell with the beef mixture and arrange them in a baking dish.
Pour the remaining salsa over the stuffed shells, then sprinkle the remaining cheese on top.
Cover the baking dish with aluminum foil and bake for 25-30 minutes, or until the cheese is melted and bubbly.
Serve hot, and garnish with sour cream, guacamole, and chopped cilantro if desired.
