★Ingredients

  • 2 cups sugar (divided)
  • 4 cups blackberries
  • 1 cup all-purpose flour
  • A pinch of salt
  • 1 teaspoon baking powder
  • 1 egg (beaten)
  • 1/4 cup cornstarch
  • 1 tablespoon vanilla flavoring
  • 1 cup milk
  • 1/2 cup melted butter (divided)

★Instructions

Preheat the oven to 350°F (175°C). Lightly oil a 9×13 inch baking dish.

In a small bowl, mix 1 cup of sugar with 1/4 cup of cornstarch.

In a large bowl, add the blackberries and pour half of the melted butter over them. Sprinkle the cornstarch mixture on top, then mix until the blackberries are evenly coated. Pour the blackberry mixture into the prepared baking dish.

In another bowl, combine the flour, the remaining 1 cup of sugar, baking powder, and a pinch of salt. Mix until well combined.

Add the beaten egg, milk, remaining melted butter, and vanilla flavoring to the flour mixture. Stir until the batter is well combined but still slightly lumpy.

Pour the batter evenly over the blackberry mixture in the baking dish.

Bake in the preheated oven until the berries are soft and the crust is golden brown, about 55 to 60 minutes.
