Turkish rolled bread stuffed with parsley and cheese

★Ingredients

  • For the Dough*
  • 1 packet (2 ¼ tsp) active dry yeast
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup warm milk
  • ¼ cup olive oil
  • ½ cup warm water
  • For the Filling*
  • 1 bunch fresh parsley, finely chopped
  • 1 cup crumbled feta cheese (or a mix of feta and ricotta for a milder taste)
  • 1 egg (optional, for extra richness)
  • Black pepper, to taste
  • Red pepper flakes (optional, for a bit of heat)
  • For Brushing*
  • 1 tbsp milk or water
  • 1 egg yolk, beaten
  • Sesame seeds or nigella seeds (optional, for sprinkling)

★Instructions

  • Prepare the Dough*
  • In a small bowl, combine the warm water, yeast, and sugar. Let it sit for 5-10 minutes until frothy.
  • In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, warm milk, and olive oil.
  • Mix until a dough forms, then knead on a floured surface for about 10 minutes until the dough is smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Prepare the Filling*
  • In a bowl, combine the crumbled cheese, chopped parsley, egg (if using), black pepper, and red pepper flakes. Mix well and set aside.
  • Shape and Fill the Bread*
  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Punch down the dough and divide it into 8 equal pieces.
  • Roll each piece into a ball, then flatten it into a circle (about 6 inches in diameter).
  • Place a spoonful of the cheese and parsley mixture in the center of each circle.
