- 1 packet (2 ¼ tsp) active dry yeast
- 4 cups all-purpose flour

- 1 tsp sugar
- 1 cup warm milk

- 1 bunch fresh parsley, finely chopped
- 1 cup crumbled feta cheese (or a mix of feta and ricotta for a milder taste)
- 1 egg (optional, for extra richness)
- Black pepper, to taste
- Red pepper flakes (optional, for a bit of heat)

- 1 tbsp milk or water
- 1 egg yolk, beaten

- Prepare the Dough*
- In a small bowl, combine the warm water, yeast, and sugar. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture, warm milk, and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until the dough is smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Prepare the Filling*
