Cranberry Bread Recipe
★Ingredients
1 cup granulated sugar
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice (freshly squeezed is best)
1/4 cup unsalted butter, cold and cut into small pieces
1 large egg, beaten
1 tablespoon grated orange zest
1/2 cup chopped nuts (optional; walnuts or pecans work well)
1 1/2 cups fresh or frozen cranberries, coarsely chopped
★Instructions
Preheat the Oven* Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
Mix Dry Ingredients* In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.
Cut in Butter* Add the cold butter pieces to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
Add Wet Ingredients* In a separate bowl, combine the orange juice, orange zest, and beaten egg. Pour this mixture into the dry ingredients and stir until just combined. Do not overmix.
Add Cranberries and Nuts* Fold in the chopped cranberries and nuts (if using).
Bake the Bread* Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve* Allow the bread to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack. Slice and enjoy!
Tips.
- If using frozen cranberries, do not thaw them before adding them to the batter.
- This bread freezes well; wrap it tightly in plastic wrap and store it in a freezer bag for up to 3 months.
