Crispy cheese stuffed onion rings

★Ingredients

1 cup shredded cheese (cheddar or your choice)

2 large onions

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (panko for extra crunch)

1 cup buttermilk (or milk)

★Instructions

  • Prepare the Onions*

Peel the onions and slice them into thick rings (about 1/2 inch thick).

Carefully separate the rings and set aside.

  • Make the Cheese Mixture*

In a bowl, mix the shredded cheese with a little bit of flour (about 1/4 cup) to help it bind together.

  • Coat the Onion Rings*

In a shallow dish, combine the flour, garlic powder, paprika, salt, and pepper.

Dip each onion ring into the flour mixture, shaking off any excess.

Dip it into the buttermilk, letting any excess drip off.

Place some of the cheese mixture into the center of the ring, then dip it back into the flour mixture, ensuring the cheese is covered.

  • Bread the Onion Rings*

After coating with flour, dip the onion ring back into the buttermilk and then into the breadcrumbs, pressing lightly to ensure the breadcrumbs stick.

  • Fry the Onion Rings*

Heat oil in a deep skillet or fryer to 350°F (175°C).

Carefully add the breaded onion rings to the hot oil in batches, avoiding overcrowding.

Fry until golden brown and crispy, about 2-3 minutes per side.

Use a slotted spoon to remove the rings and place them on paper towels to drain excess oil.
