Preheat the Oven* Preheat your oven to 450°F (230°C).
Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar (if using).
Cut in Butter* Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Add Liquid* Make a well in the center of the mixture and pour in the milk and vanilla extract (if using). Stir gently until just combined; be careful not to overmix.
Knead the Dough* Turn the dough out onto a lightly floured surface. Gently knead the dough about 5-6 times until it comes together. Pat it into a rectangle about ¾ inch thick.
Cut Biscuits* Use a sharp knife or biscuit cutter to cut out biscuits. Place them on a baking sheet lined with parchment paper, close together but not touching.
Bake* Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
