Grilled Chicken with Citrus Marinade

★Ingredients

1/4 cup olive oil

1 whole chicken (about 4-5 pounds)

2 tablespoons lemon juice

1/4 cup orange juice (freshly squeezed)

3 cloves garlic (minced)

1 teaspoon paprika

1 tablespoon honey

1 teaspoon salt

1/2 teaspoon thyme (dried)

1/2 teaspoon black pepper

1 orange (sliced for stuffing)

★Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare Chicken: Clean the chicken by removing any excess fat and pat it dry with paper towels. Place it in a roasting pan or baking dish.

Make Marinade: In a small bowl, whisk together olive oil, orange juice, lemon juice, minced garlic, honey, paprika, salt, pepper, and thyme.

Pour Over Chicken: Pour the marinade over the chicken, ensuring it coats the entire surface. You can also lift the skin slightly and rub the marinade under the skin for extra flavor.

Stuff the Chicken: Place orange slices inside the chicken cavity for added moisture and flavor while roasting.

Roast: Roast the chicken in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.

Baste: Every 30 minutes, baste the chicken with the juices that collect in the pan to keep it moist.

Rest & Serve: Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
