Ground beef and cheese casserole on a bed of mashed potatoes

★Ingredients

For the Meatloaf:

1 cup breadcrumbs

1 ½ pounds (680g) ground beef

1 small onion, finely chopped

1 egg

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

½ cup ketchup

Salt and pepper, to taste

For the Mashed Potatoes:

4 large potatoes, peeled and cubed

4 tablespoons butter

½ cup milk (adjust for creaminess)

Salt and pepper, to taste

Topping:

2 cups shredded cheddar cheese

Fresh thyme or parsley, for garnish

★Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Make the meatloaf:

In a large bowl, combine ground beef, breadcrumbs, egg, chopped onion, garlic powder, Worcestershire sauce, ketchup, salt, and pepper.

Mix until well combined and shape into mini loaves or a single loaf. Place in a greased baking dish.

Bake for about 45 minutes or until the meatloaf is cooked through.

  1. Prepare the mashed potatoes while the meatloaf is baking:

Boil the cubed potatoes in salted water for about 15 minutes, or until tender.

Drain the potatoes and mash with butter, milk, salt, and pepper until smooth.

  1. Assemble the dish:

Once the meatloaf is ready, spread the mashed potatoes in a layer in a baking dish.

Place the cooked meatloaf on top of the mashed potatoes.

  1. Add the cheese:

Sprinkle shredded cheddar cheese over the meatloaf and mashed potatoes.

Return the dish to the oven for another 10 minutes or until the cheese is melted and bubbly.

  1. Garnish with fresh thyme or parsley and serve hot.
