How to make Cajun corn on the cob

★Ingredients

2 tablespoons olive oil

4 ears of corn, husked

Salt and pepper to taste

1/3 cup sour cream or Mexican crema

4 tablespoons vegan mayonnaise

1 ½ teaspoons smoked paprika

1 ½ teaspoons Cajun seasoning

1 teaspoon garlic powder

1 tablespoon chopped cilantro

1 teaspoon onion powder

½ cup crumbled feta or cotija cheese

1 tablespoon lime juice

1 teaspoon chili powder or cayenne pepper (optional)

★Instructions

  1. Prepare the Seasoning

In a small bowl, whisk together olive oil, salt, pepper, Cajun seasoning, smoked paprika, onion powder, and garlic powder.

  1. Season the Corn:

Brush the corn ears with the prepared seasoning mixture until evenly coated.

  1. Grill the Corn:

Grill the corn on a hot grill for about 10-15 minutes, turning occasionally until tender and slightly charred.

  1. Prepare the Sauce:

In another bowl, mix together the vegan mayonnaise, sour cream (or Mexican crema), lime juice, and chopped cilantro.

  1. Serve:

Once the corn is grilled, remove it from the grill and brush with the sauce. Sprinkle crumbled feta or cotija cheese on top, and add chili powder or cayenne pepper if desired.
