Vegan Chickpea Patties Recipe

★Ingredients

1 can (400g) chickpeas, drained and rinsed

2-3 egg yolks

1/2 cup red bell pepper, finely chopped

1/4 cup onion, finely chopped

1/2 teaspoon garlic powder

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

1/4 cup breadcrumbs (optional, for a firmer texture)

Olive oil (for frying)

For the Dipping Sauce:

1 tablespoon fresh dill, chopped

1/2 cup Greek yogurt

1 tablespoon lemon juice

Salt and pepper to taste

★Instructions

In a large bowl, mash the chickpeas with a fork until they are mostly smooth but still have some texture.

Add the egg yolks, red bell pepper, onion, parsley, garlic powder, salt, and pepper. Mix well.

If the mixture is too wet, add the breadcrumbs to help bind the ingredients together.

Form the mixture into small patties.

Heat a tablespoon of olive oil in a skillet over medium heat. Fry the patties for 3-4 minutes on each side, until golden brown.

In a small bowl, mix the Greek yogurt, dill, lemon juice, salt, and pepper to create the dipping sauce.

Serve the chickpea patties warm with the yogurt dipping sauce on the side.
