Delicious beef soup

★Ingredients

2 tablespoons olive oil

2 lbs (900g) beef chuck, cut into 1-inch cubes

3 cloves garlic, minced

1 large onion, diced

3 potatoes, diced

4 carrots, sliced

1 cup red wine (optional)

2 cups beef broth

1 tablespoon Worcestershire sauce

2 tablespoons tomato paste

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

2 bay leaves

Fresh parsley, for garnish

★Instructions

Brown the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside.

Sauté Vegetables: In the same pot, add the diced onion and sauté until translucent. Add garlic and cook for an additional minute.

Combine Ingredients: Return the browned beef to the pot. Add the carrots, potatoes, beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, salt, pepper, and bay leaves.

Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 2 to 3 hours, or until the beef is tender.

Serve: Remove bay leaves before serving. Garnish with fresh parsley and enjoy your hearty beef stew with crusty bread or over rice.
